Peach Crumb Squares

At last, peaches worth eating!  I suppose if they were available year round the experience of  absolute enjoyment would certainly be lessened.

It’s definitely a good idea to take advantage of the once a year peach bounty and enjoy them in as many ways possible before they disappear… again!  That is my intention, from the first to the very last peach of the season.

Of course trying a new peach recipe or two every year is a must in my kitchen and Peach Crumb Squares was a good place to begin.

Buttery, crumbly, tasty and absolutely peachy!

Peach Crumb Squares

Dough
3 cups flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, cold
1 egg lightly beaten

  1. In a medium bowl whisk together flour, sugar, baking powder and salt.
  2. Using a pastry blender cut in the cold butter then add the beaten egg. Dough will be crumbly.
  3. Pat half of the dough into a lightly greased 9X13 inch baking pan.
  4. Place the pan and remainder of the dough in the refrigerator while preparing the filling.

Filling

5 to 6 peaches peeled diced or sliced
2 tablespoons lemon juice
½ cup all-purpose flour
1 cup granulated sugar
¼ teaspoon salt
½ teaspoon cinnamon
¼ teaspoon grated nutmeg

  1. Place the diced (or sliced) peaches in a large bowl and sprinkle with lemon juice.
  2. In a separate bowl mix together flour, sugar, salt, cinnamon and nutmeg. Pour over peaches and mix gently.
  3. Spread the peach mixture evenly over the dough in the pan then crumble the remaining dough over the peach layer.
  4. Bake in a preheated 375 degree F. oven for 45 minutes or until the top is lightly browned.
  5. Cool completely before cutting.

Notes, Tips and Suggestions

  • I cut the amount of sugar for the filling to 3/4 cups.  Although these squares are not overly sweet next time I will cut the amount of sugar in the filling to 1/2 cup .
  • Delicious topped with whipped cream or vanilla ice cream.
